The magic starts with Frenching—a technique traditionally reserved for fine dining meats like lamb chops. Here, we apply it to chicken drumettes, trimming the meat down the bone to create a handheld “lollipop” that cooks evenly, looks elegant, and makes dipping a joy.

2.5 lbs chicken wings (drumettes or split wings)

2–4 tbsp Wah Gwan® All-Purpose Seasoning

2 tbsp Wah Gwan® Dry Brine

1 tsp Wah Gwan® Scotch Bonnet Powder

1 tbsp avocado or olive oil

Juice of ½ lime
-
3 oz Amaretto liquor
-
3 oz water
-
Chopped parsley or scallions (garnish)

🔪 Step-by-Step Instructions
1. French the Wings
Using a sharp paring knife, make a circular cut around the thin end of each drumette. Slice through the skin and tendons, then push the meat toward the thick end to form a lollipop shape. Clean off any loose tendons or cartilage.
✨ Pro Tip: This step is optional but makes a huge impact in both presentation and ease of eating.
2. Season & Marinate
Toss the wings with Wah Gwan® All-Purpose Seasoning, Dry Brine, Scotch Bonnet Powder, oil, and lime juice. Mix well. Let marinate for at least 30 minutes, but preferably 4 hours or overnight for deep flavor penetration.
3. Fire Up the Grill
Preheat your grill to medium-high (around 400°F). Oil the grates lightly.
4. Grill the Wings
Place the wings on the grill and cook for 5–6 minutes per side. Once you’ve developed a nice char, start spritzing the wings with the Amaretto + Water mix. This adds a subtle sweetness, encourages caramelization, and keeps the wings moist.
If needed, shift wings to indirect heat to avoid burning. Cook until internal temperature reaches 165°F.
5. Finish & Serve
Squeeze grilled lime over the top, sprinkle with fresh herbs, and serve with your favorite dipping sauces: Buffalo, Ranch, or Bleu Cheese.
